Italian Angeletti's
INGREDIENTS
4 cups flour
2 tbsp baking powder
½ tsp salt
1/2 cup butter
1 cup sugar
6 large eggs
1 tsp vanilla or anise extract
1 lb confectioner’s sugar
¼ cup lemon juice
Candy sprinkles for decorating
DIRECTIONS
Preheat oven to 350F. Mix all dry ingredients together. In a large bowl, cream butter and sugar until light and fluffy. Add one egg at a time mixing well. Add vanilla until mixed thru and add flour mixture until dough starts to come together.
Roll into 1 to 1 ½ inch balls and place on parchment lined baking sheet and bake until golden brown for 15 mins and let cool.
Stir confectioner’s sugar, lemon juice and a tablespoon or so of water until icing is smooth and runny. Dip cookies into icing or spoon icing over cookies and sprinkle with candy sprinkle. Let rest until icing hardens.
