Pfeffernusse Cookies
As long as I have been alive Pfeffernusse Cookies have always graced our Christmas table growing up; they are little bitty balls of goodness that are delicious and so easy to make and are reminiscent of gingerbread. They're the perfect treat to dunk into a cup of fresh piping hot coffee or even cocoa.
INGREDIENTS
1/2 cup butter
1/3 cup molasses
2 eggs
4 cups flour
1/2 cup sugar
1 1/2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp ground nutmeg
1/4 tsp ground cloves
*Icing Sugar or Cookie Icing*
DIRECTIONS
For this recipe you'll have to use a saucepan to combine the molasses and butter over medium heat and heat until all the butter is melted. Once removed from the heat and cooled mix transfer the mixture to a bowl and add slightly beaten eggs, and the balance of all the dry ingredients mixing well. Cover cookie dough and refrigerate overnight.
Heat oven to 375F and roll dough into approximately one inch balls and place on a parchment paper lined cookie sheet spacing them slightly as they will spread a bit. Bake for 10 to 12 minutes until firm. Cool the cookies at which point you can dredge them in icing sugar or pour our Cookie Icing Recipe over them (recipe is below)
COOKIE ICING
INGREDIENTS
1 cup of icing sugar
1 tbsp light corn syrup
2 tbsp water
food colouring
DIRECTIONS
Sift icing sugar to insure it is lump free and combine all ingredients until silky and smooth and gently pour over cookies insuring they're completely covered and enjoy!
