Deep Fried Calamari

1 pound of calamari rings
1 cup all-purpose flour
1 tbsp dried parsley
½ tsp salt
¼ tsp pepper
Lemon wedges
Oil for frying

Heat oil to 350F. Mix flour, parsley salt and pepper in a bowl.  Toss calamari rings in flour mixture until well coated.  Place coated calamari rings into the hot oil; you’ll need to turn them in about a minute or so until light golden brown. (Don’t overcook them; they’ll get rubbery).  Drain on paper towel.  Fry them in small batches as adding too many will drop the temperature of the oil and they’ll absorb too much oil.  Move the calamari to a clean serving platter and arrange them attractively on the platter. Serve with lemon wedges, cocktail sauce or marinara.
