Creamy Coleslaw

I am one of the few people that adore cabbage in my family!  I love the crunchy texture not to mention all the health benefits eating cabbage provides. Did you know that cabbage is chocked full of Vitamin K and anthocyanins which helps with mental function and concentration?  If that’s not good enough reason to include more cabbage in your diet it is also loaded with Vitamin C and Vitamin B6 and an excellent source of fibre as well. 

 

Our Creamy Cole Slaw is creamy, slightly tangy and reminds me of summer time! Whether we’re grilling on our deck or picnicking in the great outdoors, it’s the perfect side dish that’s made with simple ingredients and pairs perfectly with our Slow-Cooker Pull Pork recipe for example, or battered fish, hot dogs; the possibilities are endless.  If you’re watching calories replace the mayo with a ¼  to ½ cup of olive oil and omit the dry mustard and sugar for a tangy tasting vinaigrette.

Creamy Coleslaw
Delicious creamy and tangy Coleslaw.
Ingredients
  • 6 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 large shredded carrots
  • 1/2 finely sliced red onion
  • 1/4 cup granulated sugar
  • 1/2 tsp dry mustard
  • 3/4 cup mayonnaise
  • 2 1/2 tbsp apple cider vinegar
  • Salt & Pepper (to taste)
  • Finely chopped parsley or crumbled oregano (for garnish)
Instructions
1. Finely shred green and red cabbage and carrots into a large bowl. If you don’t have a mandolin you may want to use a grater (large holes)shredding the vegetable.2. Slice red onions and combine with the shredded vegetables and toss well.3. In a separate bowl combine the balance of the ingredients mixing well until smooth and creamy.4. Pour onto cabbage mixture and toss well. 5. Serve and Enjoy!
