Oatmeal Raisin Cookies
INGREDIENTS
½ cup white sugar
½ cup packed brown sugar
¼ cup softened butter
¼ cup shortening (Crisco)
½ baking soda
½ tsp cinnamon
½ tsp vanilla
¼ tsp baking powder
¼ tsp salt
1 egg
1 ½ cups quick/instant oats
1 cup flour
½ cup raisins or nuts (we used dried currants ~ personal preference)
DIRECTIONS
Preheat oven to 375F. Mix all ingredients except oats, flour and raisins/currants/nuts until well combined. Then mix in oats, flour and raisins/currants/nuts. Drop onto cookie sheet spacing 2 inches apart on an ungreased cookie sheet, parchment paper or silicone liner. Bake about 10 mins until golden brown. We added a 1/2 cup of toffee pieces to our recipe.
