Holiday Drop Fruit Cake Cookies
INGREDIENTS
¾ cup flour
½ tsp ground ginger*
½ tsp cinnamon *
½ tsp nutmeg*
½ tsp all-spice*
½ tsp ground cloves*
½ tsp salt
¼ tsp baking soda
½ tsp baking powder
¼ cup softened butter
½ cup lightly packed brown sugar
1 egg
2 tsps dark rum
1 tsp vanilla
2 ½ cups chopped red and green glazed cherries (quartered)
½ cup chopped pecans or walnuts
½ cup chocolate chips
DIRECTIONS
Preheat oven to 350F.
Mix flour with spices (NOTE: use all the spices or combination of your favourite to suit your personal taste), salt, baking soda and baking powder in one bowl. In another bowl beat butter with sugar until light and fluffy. Beat in egg, rum and vanilla until blended. Gradually beat in flour mixture. Stir in chopped cherries, nuts and chocolate chips. Place on greased or parchment paper lined cookie sheet, space 2 inches apart and bake for 10 to 12 mins until golden brown.
