Caramel Almond Chip Cookies
I hear that Santa loves Chocolate chip cookies and instead of making our traditional chocolate chip cookie we decided to change up our recipe around a bit to see if Santa will eat all his cookies; a sure sign that he loves them! Fingers are crossed; we sure liked them and hope he does too! We'll be leaving the plate next to the tree with a nice glass of milk and of course a carrot for Rudolph.
INGREDIENTS
1/2 cup sugar
1/2 cup packed brown sugar
2/3 cup butter
1 tsp vanilla
1 egg
1/2 cups flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup of ground almonds
1/2 cup of Toffee candy pieces
1 cup of chocolate chips
DIRECTIONS
Heat oven to 375F.
Combine both sugars, butter, vanilla and egg until creaming. Stir in the balance of the dry ingredients including the ground almonds and Toffee pieces until well incorporated. I wrap my bowl and refrigerate for a couple of hours to harden as I prefer to roll one inch balls of dough making it much easier to handle.
Bake for 8 to 10 minutes until golden brown.
