Deep Fried Battered Chicken

We just love fried chicken but we really haven’t found a method in preparing fried chicken well enough so that it cooks thoroughly through to the bone other than oven frying which can be a pain, you really don’t get that even fried crunchy taste that only deep frying can deliver. This recipe looks long and complicated but really it is quick and easy to prepare. Our Deep Fried Batter Chicken recipe is perfect for family style dinners, buffets and picnics. If you're picnicking, try it with our delicious Potato Salad or Beet Salad.

INGREDIENTS

3 to 4 pounds of chicken pieces

1 tsp salt

Oil for deep frying

COATING

1 cup flour

½ tsp salt

½ tsp pepper

1 tbsp paprika or Cheyenne pepper

BATTER

1 cup flour

1 cup milk

1 tsp salt

1 tsp paprika , chili powder or Cheyenne pepper

¼ cup vegetable oil

1 tsp baking powder

1 egg

DIRECTIONS

Place the chicken pieces (we used bone in and boneless chicken thighs) in a large pot, add salt and fill with water so that all the chicken is submerged. Bring the water to boil, reduce heat to a simmer and cover and continue to boil for about 20 minutes. 

While the chicken is cooking prepare the coating and batter in separate bowls by mixing well. For the batter mix until it is lump free and silky smooth.  You can play with the ingredients at this point; if you like your chicken spicy add Cheyenne pepper or chili powder to each bowl.

Once the chicken is cooked through, remove any visible fat that did not cook out of the chicken.  Pat chicken dry and coat with flour mixture and then dip the chicken into the batter all the while as your oil is heating up to 350F in your deep frying pan or deep fryer. Shake off any excess batter and fry in hot oil for about 5 to 7 minutes until both sides are a rich golden brown. Drain chicken in a drain basket or a platter lined with paper towels.  Transfer chicken to a platter and enjoy with your favourite side dishes!
