Cheesy Zucchini Fritters

One of my families favourite appetizers/snacks are our Cheesy Zucchini Fritters. We can’t seem to make them fast enough since they seem to disappear as quickly as they come out of the hot oil.  There is always someone standing close by trying to steal one or two and sometimes the who draining platter.  Thankfully the batter takes minutes to whip up and frying is about 2 minutes per side.  You can load up the fryer with these beauties spacing them so they have room to plump up in the oil; keeping in mind to take a moment or two before dropping more into the oil so that the oil doesn’t cool; nobody wants greasy and soggy fritters.  We serve ours with our very own Marinara Sauce making them totally irresistible.

INGREDIENTS

1 large grated zucchini

1 cup grated Parmesan cheese

1 cup flour

1 cup milk

¼ cup oil

1 tsp baking powder

½ salt

1 tsp Italian seasoning

1 egg

Oil for frying; approximately a depth of 3 to 4 inches

DIRECTIONS

Combine flour, milk, oil, baking powder, salt, and egg until smooth and lump free.  

Fold in grated zucchini and Parmesan cheese until well combined.

Heat oil in deep fryer or deep dutch oven to 375F.

Drop mixture into hot oil with using a tablespoon or a cookie/ice cream scoop.

Fry until the edges are golden brown and flip over; this is really quick and easy and will take approximately 2 minutes on each side.

Drain on paper towel lined platter or drain basket.

We have posted our basic recipe but when we prepared the batter we quadrupled it; they're just so good they disappeared quite quickly.
