6 finely chopped Roma tomatoes
1 clove finely minced garlic
2 to 3 tbsp extra virgin olive oil
½ tsp salt
Pepper to taste
3 to 4 large basil leaves coarsely chopped + extra for garnish (extra is optional)
¼ cup Parmesan cheese + extra for garnish
Combine all ingredients in a bowl, cover and let sit at room temperature so the flavours blend well together for about ½ to 1 hr.
Meanwhile, start preparing your bread, you will need:
1 French stick or baguette
Crushed garlic clove
Cut the French stick or baguette diagonally in ¾ inch slices. Spray with extra virgin olive oil and rub with bruised garlic. Toast in 350F preheated oven until golden brown.
Arrange bread slices on an attractive serving platter. Spoon tomato mixture on top of each slice, adding a sprinkle of the juice to the bread, not too much you don’t want it soggy (the bread should have some crunch to it). Shred parmesan on top of slices before serving.
