Simple and easy!
2 cups of flour
1 cup of milk
1/2 cup sugar
1 tbsp baking powder
1/2 tsp salt
1/4 cup of butter
1 cup of peaches mashed or chopped peaches (fresh preferred) but canned and drained off season
Optional: 1/2 teaspoon of cinnamon
Preheat oven to 375 F or 350 F if you're using a fancy muffin/mini cake pan like we did!
Line muffin pan with paper baking cups or spray with non stick spray and set aside.
Mix all ingredients until blended careful not to over blend; you want muffins on the lumpy side. Fold in peaches. Fill muffin/cake cups 3/4 full; bake for 15 to 20 minutes or until golden brown.
Sprinkle icing sugar on top!
Recipe should make approximately 12 muffins or 6 mini 'cakes'.
